Rogues Enchiladas & Mole Sauce

Name: Enchiladas & Mole Sauce

Ingredients: 2 Tbsp Olive Oil; 1-2 med Onions (chopped); 3 - 8 cloves Garlic (Chopped); 1 tsp Dried hot peppers or 1 to 2 fresh hot peppers (This is optional adds heat); 1 to 1½ Tbsp Chili Powder; 2 tsp Cumin; 2 tsp Oregano; 1 Tbsp Brown Sugar; ½` tsp Salt; ¼ tsp Ground Black Pepper; 3 Tbsp Fresh chopped cilantro (can also use dried if no fresh avail drop amount to 1½ Tbsp); 1 750ml Can Crushed Tomatoes (this is even better if you have fresh tomatoes or your own canned tomato sauce); 1 cup Chicken Broth; 1 lb Ground beef or Chicken; 1 med Onion (chopped); 2 cloves Garlic (Chopped); 1-2 Fresh hot peppers of your choice Jalapenos are great here; 1 tsp chili powder; 3 cups Shredded Cheese (mostly used for the top); 12 Corn Tortillas (You can use flow tortillas here but the flavour is not as good); 1 Large Tomato (Sliced); 1 cup Shredded Lettuce; Sour Creme; 2 Green Onions sliced; Hot sauce
